Looking for a light, healthy, flavorful dish to fulfill your appetite? Look no further than Asian Turkey Bowl, it will fulfill all of your senses. In my quest to be healthier as I eat I have totally switched over to cooking with ground turkey. Adding some vegetables to the turkey along with great flavors gives you have a wonderful, light meal. I have to warn you ahead of time, I have come to love some wasabi paste in soy sauce. Jalapenos’ spice is countered with fresh lime juice which adds a wonderful depth to the flavors of Asian turkey bowl.

Seasonings add the flavor while staying light

Asian food is characterized by flavorful food that is seasoned with ginger, garlic and peppers along with other things including rice. Using fresh ginger, garlic and peppers in addition to soy sauce and wasabi fits along those lines. My Asian Turkey bowl is light and filling with a lot of flavor. It’s an easy dish to make for dinner one of those nights that you are over cooking. Some prep work ahead of time makes this dinner a snap. Take the time to cut up your vegetables in addition to having your liquid ingredients ready. Your prep work will pay off when and this dish will come together easily and fairly quickly.

Brown meat and add vegetables

You start by browning and draining some ground turkey meat. Saute chopped carrots, bell pepper, jalapeno and serrano in a little olive oil. When all is looking good(about 3-5 minutes) add in fresh ginger and garlic. Saute for about a minute to prevent burning the garlic. Due to garlic burning so easily, I often turn the burner off or onto low when I add it while stirring to make sure it gets cooked.

Let’s bring it all together

Next add in some chicken broth and continue to cook for about 5 minutes. Then add half of the spinach and cook just until it wilts. Additionally pour in juice of a lime, some soy sauce and brown sugar. Continue to cook while stirring lightly to mix all the ingredients together. This gives the brown sugar a chance to dissolve into the mixture.

Serve over rice

Before serving over cooked brown rice, toss in the last half of the spinach cooking it until it slightly wilts. Serve with low sodium soy sauce with a little wasabi paste. We like the spiciness wasabi paste gives the soy sauce, however you will need to make this call. You can always use low sodium soy sauce by itself. Mixing soy sauce and wasabi is easy, I use a teacup and pour in a little soy sauce and then mix in some wasabi paste. Start with about a quarter of an inch of wasabi paste and mix it thoroughly into about 3 tablespoons of soy sauce. Let each person decide how much additional soy sauce is added to their portion.

More serving options

Finally I suggest serving the dish with some fresh lime juice for each person to pour over their serving. Consequently I serve lime wedges on the side of each bowl. I think you will find that Asian turkey bowl fulfills all of your senses.

Ingredients

  • 1 pound Ground turkey browned and drained
  • 1 Tablespoon Olive Oil, extra virgin
  • 1/2 cup Matchstick carrots
  • 1 Red bell pepper, chopped into small pieces
  • 1 Jalapeno minced you can remove seeds if you don't like spicy
  • 1 Serrano, minced you can remove seeds if you don't like spicy
  • 4 cloves Garlic, minced
  • 1 Tablespoon Fresh grated ginger
  • 2/3 cup Low sodium chicken broth
  • 2 cups Fresh spinach, divided into cups
  • 5 Tablespoons Low sodium soy sauce divided into 2 Tablespoons and 3 Tablespoons
  • 1 Tablespoon Light brown sugar
  • 1 Lime, juiced
  • 1 Lime, quartered for serving dish
  • 3 Green onions, chopped
  • 1/4 teaspoon Wasabi paste comes in a tube
  • 2 cups Cooked brown rice

Instructions

Brown ground turkey

  • Brown ground turkey, drain and set aside.

Saute the vegetables

  • Add olive oil, carrots, red bell pepper, jalapeno & serrano, saute 1 minute. Add garlic and ginger, cook on low, careful not to burn the garlic.

Bring it all together

  • Add turkey back in, pour in chicken broth, cook for about 5 minutes then add 1 cup of the spinach. Cook until spinach is just beginning to wilt. Toss in juice of 1 lime and 2 Tablespoons of low sodium soy sauce and the brown sugar stir lightly to mix all ingredients.

Last minute add in

  • Toss in last cup of spinach. Toss lightly and serve over brown rice. Top with green onions and 1/4 of the remaining lime juice over each serving.

Serve and enjoy!

  • Optional but for a little more kick take the last 3 Tablespoons of soy sauce and mix in about 1/4 inch of wasabi paste. Be careful to mix well and pour a little soy sauce with wasabi over each serving. Serve with a quarter of a lime.
